Freezing Tomatoes

Did you know you can freeze tomatoes WHOLE? Chose nice firm tomatoes (canning tomatoes such as Monica plums or Mountain Magic saladettes work best) and simply pop those tomatoes into a freezer bag and put in your freezer. When you are ready to use a tomato or two or ten, pull out the tomatoes you want to use, run them under warm water, slip off the skins (yes very very easily), and use in your favorite soup, stew, sauce recipes! The only minor downside of this simple preservation technique is that you will find the frozen tomatoes have more water in them than fresh. But no problem - just cook down your recipe a bit more or spoon off the extra water as they are cooking and/or defrosting.
You can also freeze cut tomatoes using the same technique. Or crush your tomatoes by slicing open the top, squeezing out the seeds and water, and packing them tight inside a freezer safe container.
Lastly, of course you can make tomato sauce from your fresh tomatoes and freeze that for future use!
