Varieties of Cheese

Week #1: Fresh Cheese Curds
These cheese curds are made with milk from the cows right there on the farm.  Can’t get any fresher!  Use for poutine, pizza, fried cheese curds or just for a great snack right out of the container. Cheese curds are mild and buttery and “squeak” when you bite into them. Kid-approved and a great source of protein for school lunches.

Week #2: Swisserella
Swisserella is a mild pasteurized farmstead Jack Cheese that adds a little tangy zip to any cheese plate. This cheese also melts well, making great grilled cheese, paninis, casseroles, nachos, and mac and cheese. Try it in your favorite recipe – anytime you want a great melting cheese. We have added a variety of different herbs to add to the enjoyment: Dill-Chive; Mustard Seed; Cumin; Caraway; Red Pepper: Fenugreek; Garlic; and of course Plain.

Week #3 Danz Ahn Feta
Pronounced “dance on,” this Feta took the Silver Medal at the Easter States Cheese Competition. Firm, creamy with a good tang, and packed in salt brine, this feta is wonderful tossed over sautéed kale or chard, over pasta, in fresh salads, as a pizza topping, and so much more.

Week #4 Grating Cheese
This is a raw cow milk cheese, aged over 9 months, is perfect for grating. It is slightly nutty with a slight fruitiness. Perfect for pasta, salads, soups, and anywhere you want a sprinkling of grated cheese.
