Today, we met with Donald Billings, owner and chef of Roots, the Restaurant, in downtown Rutland. Roots opens in mid-January and will be serving a menu filled with locally grown and produced food. A REAL Local Foods restaurant right in the heart of Rutland!We are chatting with Donald about what Radical Roots Farm can grow for Roots, the Restaurant (a match made in heaven). this is such exciting news. I have HIGH hopes for this restaurant, as there's really not much choice for good food in Rutland.
