Quantities of Tomato "Seconds" Available

We have lots of Tomato "seconds" - perfect for canning, making salsa, paste - and eating!

What makes a tomato a "second" is usually the presence of splits or cracks caused by too much water. The tomato becomes so juicy, it literally splits its skin. These tomatoes may not look beautiful and they do not store very well - but they are delicious for sandwiches, salads and - of course - cooking and canning.

Some of our "seconds" also have scars and marks from insects (we are organic growers and so bugs are a fact of life), but most of these marks are simply surface marks and do not affect the fruit below the skin. Today I am making tomato paste and below their skin, most of these tomatoes were beautiful!

In the "old days" these tomatoes would have been considered "firsts" - but with the proliferation of greenhouses, and even hydroponics, people are getting used to seeing picture perfect tomatoes at market. So today, these tomatoes are "seconds."

This rainy week will mean more splits and therefore more seconds - but they are going fast (as did the offer for green beans) so please let us know soon if you are interested.
